  • 2 tbsp Vegetable Oil
  • 2 tbsp Kosher Salt
  • 1 tbsp Coarsely Ground Black Pepper
  • 1 whole Onion
  • 1 bulb Fennel
  • 2 stalks Celery
  • 4 cloves Garlic
  • 1 tbsp Chopped Ginger
  • 2 tbsp Sugar
  • 1 cup Freshly Squeezed Orange Juice
  • 1/2 cup Honey
  • 2 cups Red Wine
  • 1 cup Unsalted Beef Bouillon
  • 1 leaf Bay Leaf
  • 2 sticks Cinnamon Sticks
  • 2 pcs Star Anise
  • 2 tbsp Dried/Fresh Chilis

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the brisket on both sides with kosher salt and black pepper.
  3. Heat vegetable oil in a pan and sear the brisket for 4-5 minutes per side.
  4. Sauté onion, fennel, and celery until browned, about 5-7 minutes.
  5. Add garlic and ginger; cook for another minute until fragrant.
  6. Stir in sugar, then add orange juice, honey, wine, bay leaf, cinnamon, star anise, and chilis.
  7. Let mixture simmer for 3-5 minutes until alcohol evaporates.
  8. Return brisket to pan, ensuring it’s submerged in liquid.
  9. Cover and roast in the oven for about 3 hours.
  10. Remove brisket and let it rest for at least 15 minutes.
  11. Strain the mixture to separate the vegetables from the liquid.
  12. Reduce the liquid in a saucepan until it thickens.
  13. Slice the brisket against the grain and serve with the sauce.
