- 5.5 lbs Beef Brisket
- 2 tbsp Vegetable Oil
- 2 tbsp Kosher Salt
- 1 tbsp Coarsely Ground Black Pepper
- 1 whole Onion
- 1 bulb Fennel
- 2 stalks Celery
- 4 cloves Garlic
- 1 tbsp Chopped Ginger
- 2 tbsp Sugar
- 1 cup Freshly Squeezed Orange Juice
- 1/2 cup Honey
- 2 cups Red Wine
- 1 cup Unsalted Beef Bouillon
- 1 leaf Bay Leaf
- 2 sticks Cinnamon Sticks
- 2 pcs Star Anise
- 2 tbsp Dried/Fresh Chilis
Instructions
- Preheat the oven to 325°F (163°C).
- Season the brisket on both sides with kosher salt and black pepper.
- Heat vegetable oil in a pan and sear the brisket for 4-5 minutes per side.
- Sauté onion, fennel, and celery until browned, about 5-7 minutes.
- Add garlic and ginger; cook for another minute until fragrant.
- Stir in sugar, then add orange juice, honey, wine, bay leaf, cinnamon, star anise, and chilis.
- Let mixture simmer for 3-5 minutes until alcohol evaporates.
- Return brisket to pan, ensuring it’s submerged in liquid.
- Cover and roast in the oven for about 3 hours.
- Remove brisket and let it rest for at least 15 minutes.
- Strain the mixture to separate the vegetables from the liquid.
- Reduce the liquid in a saucepan until it thickens.
- Slice the brisket against the grain and serve with the sauce.
