Red Velvet Macarons combine the rich, cocoa-kissed flavor of classic red velvet cake with the delicate, chewy texture of French macarons. Filled with tangy cream cheese buttercream, these elegant treats are perfect for special occasions.

- 110g almond flour (superfine, blanched)
- 100g powdered sugar
- 10g unsweetened cocoa powder
- 90g egg whites, aged at room temperature
- 90g granulated sugar
- Red gel food coloring (as needed)
- 113g cream cheese, softened
- 57g unsalted butter, softened
- 240g powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Optional: Edible gold dust or white sprinkles
Instructions
- Line baking sheets with parchment or silicone mats. Fit a piping bag with a round tip. Measure all ingredients using a digital scale.
- Sift together almond flour, powdered sugar, and cocoa powder. Discard any coarse pieces.
- Whip egg whites until foamy. Gradually add granulated sugar and beat until stiff, glossy peaks form. Add red gel food coloring and mix gently.
- Fold dry ingredients into meringue in two additions. Fold gently until batter flows like lava and forms ribbons without breaking.
- Pipe 1.5-inch rounds onto prepared trays. Tap trays to release air bubbles. Rest 30–45 minutes until a skin forms.
- Bake at 300°F (150°C) for 14–16 minutes. Shells should develop feet and not wobble when touched.
- Cool completely before removing from tray. Match similar-sized shells.
- Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt. Beat until fluffy.
- Pipe filling onto one shell and sandwich with another. Refrigerate 24 hours to mature before serving.
