  3. In another bowl, beat together vegetable oil and sugar until smooth. Add eggs one at a time while mixing well after each addition.
  4. Mix in buttermilk, red food coloring, and vanilla extract until fully incorporated.
  5. Gradually combine dry ingredients with wet ingredients on low speed until just mixed; do not over-mix.
  6. Divide batter evenly between prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool in pans for about ten minutes before transferring to wire racks.
  8. Beat softened cream cheese and butter together until creamy.
  9. Gradually add powdered sugar and vanilla extract; mix until smooth.
