Description
These Raspberry Matcha Swirl Bagels are naturally tinted with raspberry and matcha, soft, chewy, and slightly sweet. Perfect for brunch or a colorful bakery-style treat.
Ingredients

- 500g bread flour
- 300g warm water
- 7g instant yeast
- 1 tbsp sugar
- 1 tsp salt
- 2 tbsp raspberry puree or beet juice (for pink dough)
- 1½ tbsp matcha powder + 1 tbsp water (for green dough)
- ½ cup fresh or dried raspberries or cranberries
- Optional: sweetened matcha cream or pistachio paste for the swirl
Instructions
- Mix flour, yeast, sugar, salt, and water into a shaggy dough. Divide in two.
- Add raspberry puree to one half and knead until fully pink. Add matcha paste to the other and knead to combine.
- Let both doughs rise until doubled.
- Roll each dough out, layer or twist together, and flatten. Add berries and optional spread before shaping.
- Form into rings or knots. Let rest 15–20 minutes.
- Boil for 30–60 seconds per side, then bake at 375°F (190°C) for 20–25 minutes until golden with color showing through.
