Ingredients

  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (melted)
  • 1 egg
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, gently mix the fresh raspberries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Set aside to allow the raspberries to release their juices.
  3. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
  4. Stir in the melted butter and the egg until combined. The mixture will be crumbly.
  5. Set aside about 1 cup of the crumble mixture for the topping.
  6. Press the remaining crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
  7. Spoon the raspberry mixture over the crust, spreading it evenly.
  8. Sprinkle the reserved crumble mixture over the raspberry filling.
  9. Place the pan in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
  10. Remove from the oven and let the bars cool in the pan for about 30 minutes before lifting them out using the parchment overhang.
  11. Once cooled, cut into squares and serve. These bars can be enjoyed warm or at room temperature.
