Delicious Raspberry Crumble Bars

- 2 cups fresh raspberries
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter (melted)
- 1 egg
- ½ teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, gently mix the fresh raspberries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Set aside to allow the raspberries to release their juices.
- In a large bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
- Stir in the melted butter and the egg until combined. The mixture will be crumbly.
- Set aside about 1 cup of the crumble mixture for the topping.
- Press the remaining crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
- Spoon the raspberry mixture over the crust, spreading it evenly.
- Sprinkle the reserved crumble mixture over the raspberry filling.
- Place the pan in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
- Remove from the oven and let the bars cool in the pan for about 30 minutes before lifting them out using the parchment overhang.
- Once cooled, cut into squares and serve. These bars can be enjoyed warm or at room temperature.
