Ingredients

- 1 cup heavy cream
- ½ cup semi-sweet chocolate chips or chopped chocolate
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
- ½ cup fresh raspberries
- Optional: crushed cookies or graham crackers for base or topping
- Extra raspberries and chocolate shavings for garnish
Instructions
- In a saucepan, heat ½ cup of cream until steaming (not boiling). Pour over chocolate in a bowl and let sit for 2 minutes, then stir until smooth. Let cool to room temperature.
- In a separate bowl, whip the remaining ½ cup cream with powdered sugar and vanilla until soft peaks form.
- Gently fold whipped cream into cooled chocolate mixture until fully combined and airy.
- Spoon a few raspberries into the bottom of small glasses or cups. Layer with mousse. Repeat if desired.
- Chill for at least 1 hour before serving.
- Top with more raspberries, crushed cookies, or chocolate shavings to serve.

- Serve chilled for best flavor.
- Can be made a day in advance.
