Ingredients

  • 1 cup heavy cream
  • ½ cup semi-sweet chocolate chips or chopped chocolate
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • ½ cup fresh raspberries
  • Optional: crushed cookies or graham crackers for base or topping
  • Extra raspberries and chocolate shavings for garnish

Instructions

  1. In a saucepan, heat ½ cup of cream until steaming (not boiling). Pour over chocolate in a bowl and let sit for 2 minutes, then stir until smooth. Let cool to room temperature.
  2. In a separate bowl, whip the remaining ½ cup cream with powdered sugar and vanilla until soft peaks form.
  3. Gently fold whipped cream into cooled chocolate mixture until fully combined and airy.
  4. Spoon a few raspberries into the bottom of small glasses or cups. Layer with mousse. Repeat if desired.
  5. Chill for at least 1 hour before serving.
  6. Top with more raspberries, crushed cookies, or chocolate shavings to serve.
