  • 1 tablespoon ground flaxseed
  • ½ cup almond flour
  • ¾ cup shredded coconut (divided)
  • 2 tablespoons coconut oil (melted)
  • 3 tablespoons agave nectar
  • ¾ cup frozen raspberries

Instructions

  1. Place the rolled oats, ground flaxseed, almond flour, and ½ cup of the shredded coconut into a food processor. Pulse in short intervals until the mixture is finely textured and uniformly combined.
  2. Add the melted coconut oil and the agave nectar to the mixture. Pulse briefly until the ingredients are fully integrated and the mixture begins to clump together.
  3. Add the frozen raspberries to the food processor. Pulse again in short bursts until the mixture forms a cohesive, textured batter. Avoid over-processing to maintain structure.
  4. Evaluate the mixture.
  5. If additional sweetness is desired, incorporate 1 tablespoon of agave nectar.
  6. If the mixture appears too moist, add an additional tablespoon of ground flaxseed or extra shredded coconut until the desired texture is achieved.
  7. Using a small cookie scoop or spoon, portion the batter into evenly sized amounts. Roll each portion between your palms to form smooth, compact balls.
  8. Roll each shaped ball in the remaining shredded coconut to create an even outer coating.
