Ingredients

  • 3/4 cup creamy peanut butter
  • 1/4 cup honey or maple syrup

  • 1 cup puffed quinoa
  • Flaky sea salt
  • Crushed nuts
  • Drizzle of melted chocolate

Instructions

  1. In a microwave-safe bowl, melt chocolate chips with coconut oil in short intervals, stirring until smooth.
  2. Spoon melted chocolate into lined muffin cups and chill for 10–15 minutes.
  3. Mix peanut butter, honey, and vanilla extract. Fold in puffed quinoa.
  4. Spoon mixture over the chocolate layer and press gently.
  5. Cover with remaining melted chocolate.
  6. Refrigerate for 20–30 minutes until fully set.
  7. Remove from molds and enjoy chilled or at room temperature.
