- 3/4 cup creamy peanut butter
- 1/4 cup honey or maple syrup

- 1 cup puffed quinoa
- Flaky sea salt
- Crushed nuts
- Drizzle of melted chocolate
Instructions
- In a microwave-safe bowl, melt chocolate chips with coconut oil in short intervals, stirring until smooth.
- Spoon melted chocolate into lined muffin cups and chill for 10–15 minutes.
- Mix peanut butter, honey, and vanilla extract. Fold in puffed quinoa.
- Spoon mixture over the chocolate layer and press gently.
- Cover with remaining melted chocolate.
- Refrigerate for 20–30 minutes until fully set.
- Remove from molds and enjoy chilled or at room temperature.
