Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon sea salt
  • Optional: 2 tablespoons mini dark chocolate chips or chopped nuts

Instructions

  1. In a large bowl, mix pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
  2. Add rolled oats, protein powder, pumpkin pie spice, and sea salt. Stir until the mixture forms a thick dough.
  3. If the dough is too sticky, add more oats; if too dry, add a bit more almond butter or pumpkin puree.
  4. Roll the mixture into small 1-inch balls using your hands.
  5. Place the balls on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.
