Ingredients

  • 1 kg Lamb Shoulder (Substitute with beef or chicken for variation.)
  • 3 tbsp Honey (Can substitute with maple syrup.)
  • 2 tbsp Coconut Oil (Olive oil can be used as a substitute.)
  • 2 tsp Salt (Adjust according to taste.)
  • 1 large Onion (Yellow or brown onion works best.)
  • 4 cloves Garlic (Crush to maximize flavor.)
  • 1 large Carrot (Substitute with parsnip if desired.)
  • 2 cups Bone Broth (Store-bought or homemade.)
  • 4 pieces Dates (Brown sugar can be used as a replacement.)
  • 1 cup Greek Yogurt (Use dairy-free for vegan option.)
  • 1 tbsp Parsley (Cilantro can be used as an alternative.)
  • 1 head Iceberg Lettuce (Romaine or butter lettuce are great substitutes.)

Instructions

  1. Combine honey, coconut oil, salt, onion, and garlic in a food processor until finely chopped. Massage into the lamb shoulder and refrigerate for at least 2 hours.
  2. In an oven-proof casserole dish, heat a splash of oil and brown the lamb shoulder for 3-5 minutes on each side.
  3. Add chopped onion, carrot, and garlic to the dish. Sauté for about 5 minutes until softened.
  4. Pour in bone broth and add dates. Scrape the bottom of the pan to deglaze and cover with foil.
  5. Select SLOW COOK setting on HIGH and cook for 6 hours.
  6. After cooking, shred the lamb off the bone using two forks. Drain excess liquid.
  7. Mix together Greek yogurt, crushed garlic, parsley, salt, and pepper in a bowl to make the sauce.
  8. Serve tender pulled lamb in fresh lettuce leaves and top with garlic yogurt sauce.
