- 1 kg Lamb Shoulder (Substitute with beef or chicken for variation.)
- 3 tbsp Honey (Can substitute with maple syrup.)
- 2 tbsp Coconut Oil (Olive oil can be used as a substitute.)
- 2 tsp Salt (Adjust according to taste.)
- 1 large Onion (Yellow or brown onion works best.)
- 4 cloves Garlic (Crush to maximize flavor.)
- 1 large Carrot (Substitute with parsnip if desired.)
- 2 cups Bone Broth (Store-bought or homemade.)
- 4 pieces Dates (Brown sugar can be used as a replacement.)
- 1 cup Greek Yogurt (Use dairy-free for vegan option.)
- 1 tbsp Parsley (Cilantro can be used as an alternative.)
- 1 head Iceberg Lettuce (Romaine or butter lettuce are great substitutes.)
- to taste Black Pepper (Adjust according to preference.)
Instructions
- Combine honey, coconut oil, salt, onion, and garlic in a food processor until finely chopped. Massage into the lamb shoulder and refrigerate for at least 2 hours.
- In an oven-proof casserole dish, heat a splash of oil and brown the lamb shoulder for 3-5 minutes on each side.
- Add chopped onion, carrot, and garlic to the dish. Sauté for about 5 minutes until softened.
- Pour in bone broth and add dates. Scrape the bottom of the pan to deglaze and cover with foil.
- Select SLOW COOK setting on HIGH and cook for 6 hours.
- After cooking, shred the lamb off the bone using two forks. Drain excess liquid.
- Mix together Greek yogurt, crushed garlic, parsley, salt, and pepper in a bowl to make the sauce.
- Serve tender pulled lamb in fresh lettuce leaves and top with garlic yogurt sauce.
