- 4-pound Boneless rib roast
- Kosher salt, to taste
- Cracked black pepper, to taste
Instructions
- Remove the roast from the refrigerator and let it sit at room temperature for at least 3 hours.
- Preheat the oven to 500°F and wait for 30 minutes to ensure it reaches the right temperature.
- Generously season the roast on all sides with kosher salt and cracked pepper.
- Use kitchen twine to tie the roast into a uniform shape.
- Place the roast on a baking rack inside a roasting pan, fat side up, and position the pan in the middle of the preheated oven.
- Set your timer for the active roasting time (roast weight × 5 minutes). For a 4-pound roast, this would be 20 minutes.
- Once the timer goes off, turn off the oven and set a new timer for 2 hours. Do not open the oven door during this time.
- After 2 hours, remove the roast from the oven and slice to serve immediately.
