Description

Ingredients

  • 4-pound Boneless rib roast
  • Kosher salt, to taste
  • Cracked black pepper, to taste

Instructions

  1. Remove the roast from the refrigerator and let it sit at room temperature for at least 3 hours.
  2. Preheat the oven to 500°F and wait for 30 minutes to ensure it reaches the right temperature.
  3. Generously season the roast on all sides with kosher salt and cracked pepper.
  4. Use kitchen twine to tie the roast into a uniform shape.
  5. Place the roast on a baking rack inside a roasting pan, fat side up, and position the pan in the middle of the preheated oven.
  6. Set your timer for the active roasting time (roast weight × 5 minutes). For a 4-pound roast, this would be 20 minutes.
  7. Once the timer goes off, turn off the oven and set a new timer for 2 hours. Do not open the oven door during this time.
  8. After 2 hours, remove the roast from the oven and slice to serve immediately.
