- 2 tablespoons olive oil
- 4 cloves garlic
- 1 cup green bell pepper, diced
- 2 medium jalapeño peppers, diced
- 2 stalks celery, diced
- 1 medium yellow onion, diced
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 2 cans cannellini beans, rinsed and drained
- 1 pound boneless chicken
- 4 cups chicken broth
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped
Instructions
- Select the sauté setting on your pressure cooker and heat the olive oil with minced garlic for about 2 minutes, until the garlic is bubbling and fragrant.
- Toss in the green bell pepper, jalapeños, celery, and onion. Sauté for about 5 minutes, or until the vegetables are softened.
- Sprinkle in the ground cumin, oregano, coriander, cayenne, and salt. Sauté for roughly 1 minute more, until fragrant.
- Pour the rinsed cannellini beans over the vegetable mixture. Layer the chicken pieces on top without stirring, then pour in the chicken broth.
- Secure the lid on your pressure cooker, set it to sealing position, then cancel the sauté program. Select the manual setting and set the cooking time for 15 minutes at high pressure.
- When cooking time is up, perform a quick pressure release by carefully moving the lid to the vented position.
- Open the pot once the pressure has fully released. Use tongs to remove the chicken to a carving board or dish. Shred the chicken with two forks.
- Add the shredded chicken back to the pot along with the sour cream and chopped fresh cilantro, stirring to combine.
- Serve your delicious chili hot in bowls.
