Ingredients

  • 1.5 lbs boneless beef chuck roast, cut into bite-sized pieces
  • 1 cup jasmine or basmati rice
  • 4 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp Korean gochujang paste
  • 2 tbsp brown sugar

Instructions

  1. Gather all ingredients and chop the beef into bite-sized pieces.
  2. Select sauté mode on your Instant Pot. Add a splash of oil and sauté minced garlic and grated ginger for about 2 minutes until fragrant.
  3. Add beef chunks to the pot and season with salt and pepper. Sauté for about 5 minutes until browned on all sides.
  4. In a bowl, whisk together soy sauce, gochujang paste, and brown sugar until smooth. Pour this mixture over the beef in the pot.
  5. Close the lid securely, set to high pressure, and cook for 30 minutes.
  6. While the beef cooks, prepare rice according to package instructions.
  7. Fluff the rice when done. Plate it and top with beef mixture, drizzling extra sauce on top if desired.
