- 1.5 lbs boneless beef chuck roast, cut into bite-sized pieces
- 1 cup jasmine or basmati rice
- 4 cloves fresh garlic, minced
- 1 inch fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp Korean gochujang paste
- 2 tbsp brown sugar
Instructions
- Gather all ingredients and chop the beef into bite-sized pieces.
- Select sauté mode on your Instant Pot. Add a splash of oil and sauté minced garlic and grated ginger for about 2 minutes until fragrant.
- Add beef chunks to the pot and season with salt and pepper. Sauté for about 5 minutes until browned on all sides.
- In a bowl, whisk together soy sauce, gochujang paste, and brown sugar until smooth. Pour this mixture over the beef in the pot.
- Close the lid securely, set to high pressure, and cook for 30 minutes.
- While the beef cooks, prepare rice according to package instructions.
- Fluff the rice when done. Plate it and top with beef mixture, drizzling extra sauce on top if desired.
