  • 2 cups all-purpose flour

  • 2 tsp baking powder
  • 3 large eggs, at room temperature
  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk (or almond milk)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round cake pan with butter or nonstick spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and finely chopped pistachios until evenly combined.
  3. In another bowl, beat the eggs and mix in melted butter and milk until smooth. Gradually add this mixture into the dry ingredients.
  4. Pour the batter into your prepared pan. Bake for about 30-35 minutes or until a toothpick comes out clean when poked into the center.
  5. Once baked, remove your cake from the oven and let it cool in the pan for about ten minutes before transferring it onto a wire rack.
  6. Once completely cooled, whip some cream and spread it over the top of your Pistachio Christmas Cake. Top with crushed pistachios or festive sprinkles!
