- 1 cup shelled pistachios
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 3 large eggs, at room temperature
- 1/2 cup unsalted butter, melted
- 1 cup whole milk (or almond milk)
Instructions
- Preheat your oven to 350°F (175°C). Grease a round cake pan with butter or nonstick spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and finely chopped pistachios until evenly combined.
- In another bowl, beat the eggs and mix in melted butter and milk until smooth. Gradually add this mixture into the dry ingredients.
- Pour the batter into your prepared pan. Bake for about 30-35 minutes or until a toothpick comes out clean when poked into the center.
- Once baked, remove your cake from the oven and let it cool in the pan for about ten minutes before transferring it onto a wire rack.
- Once completely cooled, whip some cream and spread it over the top of your Pistachio Christmas Cake. Top with crushed pistachios or festive sprinkles!
