- 3 cups cooked jasmine rice (chilled)
- 1.5 cups fresh pineapple (diced)
- 1 red bell pepper (chopped)
- 3 green onions (sliced)
- 2 cloves garlic (minced)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 0.5 tsp red chili flakes (adjust to taste)
- 0.5 cup roasted cashews (optional)
- 0.5 lime (juiced)
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Sauté minced garlic for 30 seconds until fragrant.
- Add chopped red bell pepper and cook for 2–3 minutes.
- Stir in diced pineapple and cook briefly to caramelize.
- Add chilled jasmine rice and break apart any clumps.
- Pour in soy sauce, sesame oil, and chili flakes. Stir well.
- Mix in roasted cashews and sliced green onions.
- Finish with fresh lime juice, adjust seasoning, and serve hot.
