Ingredients

  • 1 cup Shredded Coconut (opt for unsweetened)
  • 1 large Fresh Pineapple (ripe)
  • 2 Kiwis (ripe)
  • 1 handful Fresh Mint Leaves
  • 2 tablespoons Limes (both zest and juice)
  • 1 tablespoon Honey (adjust to taste)

Instructions

  1. Toast the coconut in a skillet over medium-low heat for 3-5 minutes until lightly browned.
  2. Prepare the fruits by peeling and cubing the pineapple and chopping the kiwis into bite-sized pieces.
  3. Add fresh mint leaves, julienne them and sprinkle over the fruit mixture.
  4. Make the dressing by whisking together lime juice and honey until well combined.
  5. Combine everything and allow to chill in the refrigerator for 15 minutes before serving.
