- 1.5 pounds chicken thighs (boneless, skinless)
- 1 cup pineapple chunks (in juice)
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon vegetable oil
- Salt and black pepper, to taste
- Chopped green onions, for garnish
Instructions
- Heat a large skillet over medium-high heat and add the vegetable oil.
- Season chicken with salt and pepper, then sear for 4–5 minutes per side until golden brown.
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger. In a small bowl, mix cornstarch and water to form a slurry.
- Pour the pineapple sauce over the chicken and add pineapple chunks.
- Reduce heat and let simmer for 10–12 minutes. Stir in the slurry and simmer until the glaze thickens.
- Sprinkle with green onions and serve with rice or veggies.
