- 2 cups cooked chicken, chopped or shredded
- 1 cup pineapple tidbits, drained
- 2 stalks celery, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Chop or shred your cooked chicken into bite-sized pieces.
- In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, salt, and pepper.
- Add the chicken, pineapple tidbits, celery, and red onion to the dressing.
- Stir until well combined and everything is evenly coated.
- Fold in the parsley if using.
- Cover and refrigerate for at least 30 minutes before serving.
- Serve on bread, in lettuce wraps, or with crackers.
