- 1 lb chicken breast, cubed
- 2 tbsp olive or sesame oil
- 2 cloves garlic, minced
- ½ cup soy sauce
- ⅓ cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1½ cups cooked rice
- 1 cup pineapple chunks
- ½ red bell pepper, diced
- Chopped green onions for garnish
Instructions
- In a non-stick skillet, heat oil over medium heat. Sauté cubed chicken until browned and cooked through; remove from pan.
- In the same skillet, add minced garlic and sauté until fragrant. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; let simmer for 5 minutes.
- Mix cornstarch with water and add to the pan; cook until the sauce thickens.
- Return chicken to the pan along with pineapple chunks and red bell pepper; stir well.
- Add cooked rice and mix thoroughly; heat everything through for a few more minutes.
- Garnish with chopped green onions before serving.
Notes
- This dish cooks in just 30 minutes.
- Adjust sweetness by adding more or less honey.
