Ingredients

  • 1 lb chicken breast, cubed
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • Chopped green onions for garnish

Instructions

  1. In a non-stick skillet, heat oil over medium heat. Sauté cubed chicken until browned and cooked through; remove from pan.
  2. In the same skillet, add minced garlic and sauté until fragrant. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; let simmer for 5 minutes.
  3. Mix cornstarch with water and add to the pan; cook until the sauce thickens.
  4. Return chicken to the pan along with pineapple chunks and red bell pepper; stir well.
  5. Add cooked rice and mix thoroughly; heat everything through for a few more minutes.
  6. Garnish with chopped green onions before serving.

Notes
