- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 0.5 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple with juice (not drained)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Line with parchment paper if desired.
- In a large bowl, whisk together flour, baking soda, and salt.
- In another bowl, beat sugar and eggs until light. Add vegetable oil and vanilla, then mix well.
- Stir in the crushed pineapple with all its juice.
- Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
