- 1 cup diced pineapple, fresh or canned and lightly drained
- 1/2 cup sweetened shredded coconut
- 1 cup sweetened condensed milk
- 1/2 cup coconut cream or heavy cream
- 1 box yellow cake mix
- 3/4 cup unsalted butter, melted
- 1/2 cup pineapple chunks or tidbits (optional)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Spread the crushed pineapple with its juice evenly across the bottom of the dish.
- Add the diced pineapple and sprinkle shredded coconut over the top.
- Drizzle the sweetened condensed milk evenly over the fruit layer.
- Pour the coconut cream or heavy cream on top without stirring.
- Sprinkle the dry yellow cake mix evenly over the surface.
- Slowly drizzle the melted butter over the cake mix.
- Scatter pineapple chunks across the top (optional).
- Bake for 45–55 minutes until the top is golden brown and the edges are bubbling.
- Remove from the oven and let it cool for 15–20 minutes before serving.
