- 1 pound Kielbasa (Substitute with Polish, smoked, or Italian sausage for variety.)
- 1 medium Red Onion (Replace with yellow onion or shallots if desired.)
- 2 large Bell Peppers (Use any color or swap for zucchini or asparagus.)
- 3 cloves Garlic (Garlic powder can be used if fresh isn’t available.)
- 2 teaspoons Fresh Thyme (Consider using rosemary or oregano for a twist.)
- 2 teaspoons Smoked Paprika (Regular paprika can be used as a substitute.)
- 1 tablespoon Sriracha or Hot Sauce (Switch to a milder or stronger sauce based on preference.)
- 16–20 ounces Frozen Pierogies (Commonly potato and cheese. Fresh pierogies can be used with reduced bake time.)
- 4 tablespoons Olive Oil (Can substitute with canola or avocado oil.)
- Salt and Black Pepper (Adjust to taste.)
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Arrange the frozen pierogies, sliced bell peppers, chopped red onion, and minced garlic on the sheet pan.
- Whisk together olive oil, thyme, smoked paprika, Sriracha, salt, and black pepper, then drizzle over the vegetable medley.
- Layer the ingredients evenly and nestle the kielbasa among the veggies.
- Bake for 28-35 minutes, flipping the ingredients halfway through.
- Serve your creation hot, optionally garnished with fresh herbs and sour cream.
