Ingredients

  • 1 pound Kielbasa (Substitute with Polish, smoked, or Italian sausage for variety.)
  • 1 medium Red Onion (Replace with yellow onion or shallots if desired.)
  • 2 large Bell Peppers (Use any color or swap for zucchini or asparagus.)
  • 3 cloves Garlic (Garlic powder can be used if fresh isn’t available.)
  • 2 teaspoons Fresh Thyme (Consider using rosemary or oregano for a twist.)
  • 2 teaspoons Smoked Paprika (Regular paprika can be used as a substitute.)
  • 1 tablespoon Sriracha or Hot Sauce (Switch to a milder or stronger sauce based on preference.)
  • 1620 ounces Frozen Pierogies (Commonly potato and cheese. Fresh pierogies can be used with reduced bake time.)
  • 4 tablespoons Olive Oil (Can substitute with canola or avocado oil.)
  • Salt and Black Pepper (Adjust to taste.)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Arrange the frozen pierogies, sliced bell peppers, chopped red onion, and minced garlic on the sheet pan.
  3. Whisk together olive oil, thyme, smoked paprika, Sriracha, salt, and black pepper, then drizzle over the vegetable medley.
  4. Layer the ingredients evenly and nestle the kielbasa among the veggies.
  5. Bake for 28-35 minutes, flipping the ingredients halfway through.
  6. Serve your creation hot, optionally garnished with fresh herbs and sour cream.
