Ingredients

- 2 cups Persian Cucumbers
- 2 cups Roma Tomatoes
- 1 medium Red Onion
- 1 cup Fresh Parsley
- 1/4 cup Fresh Mint (optional)
- 1/4 cup Ab Ghooreh (Sour Grape Juice) or Lemon Juice
- 1/4 cup Olive Oil
- to taste Salt
- to taste Pepper
Instructions
- Finely dice the Persian cucumbers, Roma tomatoes, red onion, and parsley to a uniform size of about 1/4”.
- In a large mixing bowl, combine all the diced vegetables and gently toss.
- Drizzle the tossed ingredients with olive oil and either sour grape juice or lemon juice.
- Sprinkle salt and pepper over the salad before tasting and adjust the seasoning.
- Gently mix the salad until all ingredients are evenly coated in the dressing and serve immediately.
