Ingredients

  • 2 cups Persian Cucumbers
  • 2 cups Roma Tomatoes
  • 1 medium Red Onion
  • 1 cup Fresh Parsley
  • 1/4 cup Fresh Mint (optional)
  • 1/4 cup Ab Ghooreh (Sour Grape Juice) or Lemon Juice
  • 1/4 cup Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions

  1. Finely dice the Persian cucumbers, Roma tomatoes, red onion, and parsley to a uniform size of about 1/4”.
  2. In a large mixing bowl, combine all the diced vegetables and gently toss.
  3. Drizzle the tossed ingredients with olive oil and either sour grape juice or lemon juice.
  4. Sprinkle salt and pepper over the salad before tasting and adjust the seasoning.
  5. Gently mix the salad until all ingredients are evenly coated in the dressing and serve immediately.
