Instructions

  1. In a stand mixer, cream the softened butter with lemon zest and confectioners sugar until smooth and fluffy. Add vanilla extract and rose water, mixing until well combined.
  2. Gradually incorporate the flour, salt, cardamom, and chopped pistachios into the wet mixture. Stir until just combined to keep cookies tender.
  3. Shape the dough into a disc, wrap in cling film, and chill for about 30 minutes to make it easier to roll out.
  4. Roll out the chilled dough to ¼ inch thickness. Cut out desired shapes and place them on parchment-lined baking sheets. Chill again for 30-45 minutes.
  5. Preheat oven to 350°F (175°C). Bake cookies for 15-20 minutes or until edges are light golden.
  6. Allow cookies to cool on a wire rack. Dip in melted white chocolate and sprinkle with pistachios and rose petals while chocolate is wet. Let set before serving.
