- 1 pie crust
- 4 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 5 oz fresh spinach
- 3/4 cup crumbled feta cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
Instructions
- Preheat oven to 375°F and pre-bake pie crust for 8–10 minutes until lightly golden. Let cool.
- In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent. Add garlic and cook for 30 seconds.
- Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together eggs, milk, cream, salt, pepper, and nutmeg until smooth.
- Spread the spinach mixture into the cooled crust and top with crumbled feta.
- Pour the egg mixture over the filling and gently shake to settle.
- Bake at 375°F for 35–40 minutes or until the top is golden and center is set.
- Let the quiche cool for 10 minutes before slicing and serving.
