Classic Pecan Pie with Bourbon Whipped Cream

- 1 ¼ cups (160 g) all-purpose flour
- 1 tbsp sugar
- ½ tsp salt
- ½ cup (115 g) cold unsalted butter, cubed
- 3–4 tbsp ice water
- 1 cup (200 g) brown sugar
- ¾ cup (240 ml) light corn syrup
- 3 large eggs
- ¼ cup (60 g) unsalted butter, melted
- 2 tsp vanilla extract
- 1 tbsp bourbon (optional)
- ¼ tsp salt
- 1 ½ cups (170 g) pecan halves, lightly toasted
- 1 cup (250 ml) heavy cream
- 1 tbsp bourbon
- 1 tbsp icing sugar
- ½ tsp vanilla extract
Instructions
- Make the crust: In a bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water gradually until dough comes together. Form into a disc, wrap, and chill for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out dough on a lightly floured surface and fit into a 9-inch pie dish. Trim edges and crimp decoratively. Chill for 15 minutes.
- Blind bake (optional): Line with parchment and pie weights. Bake for 10 minutes; remove weights and bake another 5 minutes until lightly golden. Cool slightly.
- Prepare the filling: In a bowl, whisk brown sugar, corn syrup, eggs, melted butter, vanilla, bourbon, and salt until smooth. Stir in toasted pecans.
- Bake: Pour filling into crust and bake 45–50 minutes, or until center is just set. If edges brown too quickly, cover with foil.
- Cool completely: Allow pie to cool for at least 2 hours before slicing — the filling will continue to set as it cools.
- Make bourbon whipped cream: Beat cream, bourbon, sugar, and vanilla until soft peaks form. Chill until ready to serve.
- Serve: Slice pie and top each piece with a dollop of bourbon whipped cream and extra toasted pecans.
