  • ½ cup (115 g) cold unsalted butter, cubed
  • 34 tbsp ice water
  • 1 cup (200 g) brown sugar
  • ¾ cup (240 ml) light corn syrup
  • 3 large eggs
  • ¼ cup (60 g) unsalted butter, melted
  • 2 tsp vanilla extract
  • 1 tbsp bourbon (optional)
  • ¼ tsp salt
  • 1 ½ cups (170 g) pecan halves, lightly toasted
  • 1 cup (250 ml) heavy cream
  • 1 tbsp bourbon
  • 1 tbsp icing sugar
  • ½ tsp vanilla extract

Instructions

  1. Make the crust: In a bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water gradually until dough comes together. Form into a disc, wrap, and chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out dough on a lightly floured surface and fit into a 9-inch pie dish. Trim edges and crimp decoratively. Chill for 15 minutes.
  3. Blind bake (optional): Line with parchment and pie weights. Bake for 10 minutes; remove weights and bake another 5 minutes until lightly golden. Cool slightly.
  4. Prepare the filling: In a bowl, whisk brown sugar, corn syrup, eggs, melted butter, vanilla, bourbon, and salt until smooth. Stir in toasted pecans.
  5. Bake: Pour filling into crust and bake 45–50 minutes, or until center is just set. If edges brown too quickly, cover with foil.
  6. Cool completely: Allow pie to cool for at least 2 hours before slicing — the filling will continue to set as it cools.
  7. Make bourbon whipped cream: Beat cream, bourbon, sugar, and vanilla until soft peaks form. Chill until ready to serve.
  8. Serve: Slice pie and top each piece with a dollop of bourbon whipped cream and extra toasted pecans.
