- 1/2 cup plain or seasoned breadcrumbs
- 1 tbsp olive oil
- Salt and pepper to taste
- 4 salmon fillets (6 oz each)
- 2 tbsp Dijon mustard
- 2 tbsp honey
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine finely chopped pecans, breadcrumbs, salt, pepper, and olive oil until well mixed.
- Lightly grease a baking dish with nonstick spray or olive oil.
- Place salmon fillets skin-side down in the prepared baking dish.
- Spread Dijon mustard generously over each fillet and drizzle honey on top.
- Spoon the pecan mixture onto each fillet, pressing gently to adhere.
- Bake in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork and the topping is golden brown.
