Ingredients

  • 1 cup finely chopped pecans
  • 1/2 cup plain or seasoned breadcrumbs
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 salmon fillets (6 oz each)
  • 2 tbsp Dijon mustard
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine finely chopped pecans, breadcrumbs, salt, pepper, and olive oil until well mixed.
  3. Lightly grease a baking dish with nonstick spray or olive oil.
  4. Place salmon fillets skin-side down in the prepared baking dish.
  5. Spread Dijon mustard generously over each fillet and drizzle honey on top.
  6. Spoon the pecan mixture onto each fillet, pressing gently to adhere.
  7. Bake in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork and the topping is golden brown.
