This Pear Cardamom Crumble is autumn comfort in its purest form — tender spiced pears bubbling beneath a golden, buttery oat topping.

- 5 ripe pears (peeled, cored, and sliced)
- ¼ cup (50 g) brown sugar
- 1 tbsp lemon juice
- 1 tsp ground cardamom
- ½ tsp cinnamon
- 1 tbsp cornstarch
- ¾ cup (90 g) all-purpose flour
- ½ cup (45 g) rolled oats
- ½ cup (100 g) brown sugar
- ¼ tsp salt
- ½ tsp cardamom
- ½ cup (115 g) cold unsalted butter, cubed
- Scoop of vanilla ice cream or dollop of whipped cream
- Sprinkle of chopped pistachios
Instructions
- Preheat oven to 350°F (175°C). Lightly butter an 8-inch baking dish.
- Prepare the filling: In a bowl, combine sliced pears, brown sugar, lemon juice, cardamom, cinnamon, and cornstarch. Toss until evenly coated. Pour into the prepared dish.
- Make the crumble topping: In another bowl, mix flour, oats, brown sugar, salt, and cardamom. Add cold butter and rub between fingertips until the mixture resembles coarse crumbs.
- Assemble: Sprinkle the crumble mixture evenly over the pears.
- Bake: Bake for 35–40 minutes, until the topping is golden and the filling is bubbling around the edges.
- Cool slightly: Let rest for 10–15 minutes before serving.
- Serve: Spoon into bowls and top with vanilla ice cream, whipped cream, or a drizzle of honey.
