This no-bake peanut butter cup ice cream pie is incredibly easy to make and has a creamy texture. It features a chocolate cookie crust, vanilla ice cream, peanut butter swirls, and chopped peanut butter cups, all topped with chocolate syrup. It’s a perfect frozen dessert for any occasion.

- 1/4 cup melted unsalted butter
- 1 pint vanilla ice cream, softened
- 1/2 cup creamy peanut butter
- 1 cup chopped peanut butter cups
- 1/2 cup chocolate syrup
- Whipped cream for topping (optional)
Instructions
- Mix chocolate cookie crumbs and melted butter until the mixture resembles wet sand.
- Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan.
- Freeze the crust for approximately 15 minutes until firm.
- Spread the softened vanilla ice cream evenly over the chilled crust.
- Drizzle the peanut butter in swirls over the ice cream.
- Drizzle the chocolate syrup over the peanut butter swirls.
- Sprinkle the chopped peanut butter cups over the top, pressing some gently into the ice cream.
- Cover the pie with plastic wrap and freeze for at least 4 hours, or preferably overnight.
- Before serving, let the pie sit at room temperature for about 5 minutes for easier slicing.
- Top with whipped cream, if desired, before serving.
Notes
- For finer cookie crumbs, use a food processor or a zip-top bag and rolling pin.
- Soften the ice cream just enough to spread easily; too soft and it may melt the crust.
- To prevent ice crystals on leftovers, cover tightly with plastic wrap pressed directly onto the surface.
- Run your knife under hot water between slices for cleaner cuts.
