Peaches and Cream Crumble Bars are sweet, buttery, and packed with juicy peach flavor. A tender shortbread base is layered with creamy custard and topped with a golden, crunchy crumble—perfect for dessert or afternoon treats.

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups fresh or canned peaches, diced
- 1/4 cup granulated sugar (for peaches)
- 1 tbsp lemon juice
- Optional: 1/2 tsp cinnamon for topping
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Beat eggs and vanilla together, then mix into the crumb mixture until a dough forms.
- Press 2/3 of the dough into the prepared pan to form the base.
- In a separate bowl, toss peaches with 1/4 cup sugar and lemon juice. Spread evenly over the base.
- Crumble remaining dough over the peach layer. Sprinkle with cinnamon if desired.
- Bake 35–40 minutes until golden brown and set. Cool completely before cutting into bars.
