- 1 cup unsalted butter, melted (226 g)
- 1 cup granulated sugar (200 g)
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour (300 g)
- ½ teaspoon salt
- 2 cups fresh peaches, diced (about 3 peaches)
- 1 cup fresh raspberries
- ⅓ cup granulated sugar (65 g)
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- In a mixing bowl combine melted butter, sugar, and vanilla extract. Add flour and salt and mix until a crumbly dough forms.
- Press about two-thirds of the crumb mixture evenly into the bottom of the prepared pan.
- In a bowl combine diced peaches, raspberries, sugar, cornstarch, and lemon juice. Stir gently until evenly coated.
- Spread the fruit mixture evenly over the crust layer.
- Sprinkle the remaining crumb mixture evenly over the fruit filling.
- Bake for 40–45 minutes until the topping is golden and the fruit filling is bubbling.
- Allow the bars to cool completely before slicing into squares.
