Description

These peach financiers are elegant French almond cakes. They feature a nutty browned butter flavor with sweet fresh peaches. Traditionally shaped like gold bars, these mini cakes have a crisp exterior and a tender, moist interior.


Ingredients

  • 3 ounces unsalted butter, plus more for greasing
  • 3 egg whites
  • ½ cup white sugar
  • ½ cup almond meal
  • 3 tablespoons all-purpose flour
  • ¼ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 12 small pieces of peeled peach

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Generously butter a 12-muffin mini-muffin tin. Add a pinch of flour to each cup; shake to coat the bottoms.
  3. Melt the butter in a saucepan over medium heat until it foams. Keep the pan moving to prevent burning. Toast the butter until it turns golden brown, about 4 minutes. Remove from heat.
  4. In a large bowl, whisk the egg whites and sugar together until the sugar dissolves and the egg whites become thick and foamy, about 2 to 3 minutes.
  5. Mix in the almond meal, flour, vanilla extract, and salt.
  6. Whisk in the browned butter.
  7. Fill the muffin cups almost to the top. Tap the pan to eliminate any air bubbles.
  8. Bake for 5 minutes.
  9. Remove the pan from the oven and top each financier with a small piece of peach.
  10. Transfer the pan back to the oven and continue baking until the financiers are golden brown, about 10 to 12 more minutes.
  11. Let the financiers cool in the pan for at least 10 minutes before removing them.
