- 6 cups sliced peaches (fresh, frozen, or canned and drained)
- 3/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine sliced peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Stir until evenly coated. Pour into prepared baking dish.
- In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk until smooth. Mix in melted butter.
- Pour the batter evenly over the peaches. Do not stir. The batter will rise and form a golden topping as it bakes.
- Bake for 40–45 minutes, or until the top is golden brown and the peach filling is bubbling.
- Allow cobbler to cool for at least 10–15 minutes before serving.
