  • 1 cup Caster Sugar
  • 3 Eggs (room temperature)
  • 1 cup Plain Flour
  • 1 tsp Baking Powder
  • 1/4 cup Cornflour
  • 1 tsp Vanilla Essence
  • 1 cup Canned Full-Fat Coconut Milk
  • 1 cup Passionfruit Pulp
  • 1/4 cup Unsalted Butter
  • 1/2 cup Caster Sugar
  • 3 Eggs
  • 1/2 cup Unsalted Butter (softened)
  • 2 cups Icing Sugar
  • 1/4 cup Canned Full-Fat Coconut Milk
  • 1/2 cup Passionfruit Curd
  • 1 cup Icing Sugar
  • Water (as needed)
  • 1 cup Desiccated Coconut

Instructions

  1. Preheat your oven to 175°C (fan). In a large mixing bowl, cream together the unsalted butter and caster sugar until light and fluffy, about 3-5 minutes. Add eggs one at a time, mixing well after each addition. Sift together plain flour, baking powder, and cornflour, and then gradually fold in with vanilla essence and coconut milk. Pour the batter into a greased 8×8 inch tin and bake for 30 minutes or until a skewer comes out clean. Allow to cool before trimming the edges.
  2. Prepare the passionfruit curd by sieving the passionfruit pulp. In a heatproof bowl over simmering water, combine extracted juice, butter, and caster sugar, stirring until dissolved. Gradually whisk in eggs until thickened, about 10 minutes. Remove from heat and cool completely.
  3. For the buttercream, cream together unsalted butter and icing sugar until fluffy, about 4-6 minutes. Gradually add coconut milk until smooth.
  4. For the icing, sieve the passionfruit curd for smoothness. Combine with icing sugar and add water as needed to achieve drizzling consistency.
  5. Once the sponge has cooled, cut into squares. Pipe a border of buttercream and fill with passionfruit curd. Sandwich with another sponge piece, then refrigerate for 30 minutes.
  6. Spread a thin layer of buttercream on each lamington before dipping into passionfruit icing. Roll in desiccated coconut for coating. Add extra buttercream and curd on top for presentation.
