Ingredients

  • 2 grilled or pan-seared chicken thighs, sliced
  • 1 avocado, diced
  • 3 cups chopped romaine or iceberg lettuce
  • 1 cup shredded red cabbage
  • 1/4 cup grated parmesan cheese
  • 2 tbsp toasted sesame seeds or chopped walnuts
  • Salt and pepper to taste
  • Creamy Dressing (Optional)
  • 2 tbsp tahini or Caesar-style dressing
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Water to thin (as needed)

Instructions

  1. Cook the chicken thighs until golden and cooked through. Let rest, then slice.
  2. In a small bowl, whisk together tahini, lemon juice, mustard, and a splash of water until creamy.
  3. In a large bowl, layer lettuce, cabbage, chicken, avocado, and parmesan.
