Ingredients
- 1 medium green cabbage (cut into 1-inch thick slices)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Garlic powder (optional)
- 1 pound (450g) lean ground beef
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon Worcestershire sauce (or soy sauce)
- 1/4 cup grated cheddar or mozzarella (optional)
- Chopped parsley or chives (for garnish)
- Pickles or sliced tomatoes (for garnish)
- Dollop of sour cream or Greek yogurt (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Cut the cabbage into 1-inch thick slices and arrange them in a single layer on the prepared baking sheet.
- Drizzle the cabbage slices with olive oil. Season with salt, pepper, and garlic powder. Roast for 20 minutes, or until the edges begin to caramelize.
- While the cabbage roasts, combine the lean ground beef with onion powder, smoked paprika, garlic powder, salt, black pepper, and Worcestershire sauce in a mixing bowl. Mix gently; do not overwork the meat.
- Remove the pan with the roasted cabbage from the oven. Spoon a portion of the beef mixture onto each cabbage round, gently pressing it down to form a thin patty.
- Return the pan to the oven and bake for another 15–18 minutes, until the beef is cooked through.
- If desired, sprinkle grated cheddar or mozzarella cheese over each patty during the last 5 minutes of baking until melted.
- Garnish the oven-baked cabbage burgers with fresh parsley or chives, pickles, or sliced tomatoes. Serve warm with a dollop of sour cream or Greek yogurt if desired.
Notes
- Roast the cabbage first to achieve the best texture and caramelization.
- Use lean ground beef to prevent excess grease from accumulating on the sheet pan.
- Ensure there is space between the cabbage steaks on the pan for even roasting.
- Pre-roasting the cabbage enhances its caramelization and overall flavor.
- Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) for 10 minutes for optimal texture.
