Description

This indulgent Outback Steakhouse Potato Soup is a comforting blend of creamy potatoes, crispy bacon, and melted cheese, perfect for chilly autumn evenings.

Ingredients

Scale
  • 8 slices Bacon, cooked and crumbled
  • 4 large Potatoes, russet or golden
  • 2.5 cups Chicken Stock
  • 1 cup Cold Water
  • 0.75 cup Cheddar Cheese, plus more for topping
  • 0.75 cup Heavy Whipping Cream
  • 0.5 cup Butter, unsalted
  • 0.33 cup All-Purpose Flour
  • 0.25 cup Green Onion, diced
  • 0.5 Yellow Onion, diced, optional
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground Black Pepper

Instructions

  1. Dice the potatoes into bite-sized pieces and place them in a pot of salted water. Boil until tender, about 15-20 minutes.
  2. In a large pot, combine chicken stock, diced yellow onions (if using), salt, and ground black pepper. Bring to a simmer over medium heat for 20 minutes.
  3. In a separate saucepan, melt the butter over medium heat. Whisk in the all-purpose flour to form a roux and cook until it turns slightly golden for about 2-3 minutes.
  4. Pour the roux into the simmering stock mixture, stirring continuously to thicken the soup.
  5. Gradually mix in the heavy whipping cream until well incorporated, stirring until the soup reaches a creamy consistency.
  6. Drain the cooked potatoes and add them to the soup. Stir well and let it warm through.
  7. Spoon the hot soup into bowls and garnish with shredded cheddar cheese, crispy crumbled bacon, and diced green onions.

Notes

  • You can substitute bacon with turkey bacon for a lighter option.
  • Broth can also be used as an alternative to chicken stock.
  • Light cream or milk can decrease the richness of the soup.
  • Cornstarch can be used for a gluten-free option.
  • Chives can be substituted for green onions for a milder flavor.
