- 2 cups (240g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1¼ cups (250g) granulated sugar
- 2 large oranges, zested
- 3 large eggs, room temperature
- 1 cup (237ml) olive oil
- ½ cup (118ml) freshly squeezed orange juice
- ½ cup (118ml) whole milk, room temperature
- 2 tablespoons (25g) granulated sugar for topping (optional)
Instructions
- Preheat the oven to 350°F (177°C). Grease and line a 9-inch (23 cm) springform or cake pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In a stand mixer or using a hand mixer, beat the granulated sugar and orange zest together until the mixture resembles wet sand.
- Slowly add the eggs to the sugar and orange zest mixture, mixing until fully incorporated. Increase the speed to high and whip for 4-5 minutes until the batter is thick and light yellow in color.
- With the mixer on medium speed, stream in the olive oil. Once all the oil is added, increase the speed to high for one more minute.
- On low speed, add the orange juice and milk, then gradually add the dry ingredients. Mix until just combined.
- Pour the batter into the prepared pan and sprinkle with sugar (optional). Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the cake in the pan for 15-20 minutes, then gently release the springform pan and let the cake cool for an additional 5-10 minutes. Dust with powdered sugar and garnish with orange slices before serving.
