- 2 teaspoons baking powder
- 1 teaspoon ground cardamom
- ¼ teaspoon salt
- ¾ cup granulated sugar
- ¾ cup plain yogurt
- 2 large eggs
- ½ cup olive oil
- ⅓ cup fresh orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, cardamom, and salt.
- In a large bowl, whisk together the sugar, yogurt, eggs, olive oil, orange juice, orange zest, and vanilla extract until smooth.
- Stir the dry ingredients into the wet mixture just until no flour remains. Avoid overmixing.
- Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
