Classic Opera Cake is a luxurious French dessert that masterfully layers almond sponge cake, rich coffee buttercream, and velvety dark chocolate ganache.

- 1 cup almond flour
- 4 large eggs
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter (softened)
- 1/2 cup strong brewed coffee
- 8 oz dark chocolate (70% cocoa)
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease two rectangular baking pans and line them with parchment paper.
- In a mixing bowl, combine almond flour and cocoa powder. In another bowl, whisk eggs and sugar until fluffy. Gently fold in the dry ingredients until fully combined.
- Divide the batter evenly between the prepared pans and bake for 15-20 minutes or until a toothpick comes out clean. Allow to cool completely before removing from pans.
- Prepare the coffee buttercream by creaming softened butter with powdered sugar, then gradually adding brewed coffee until light and fluffy.
- For the ganache, heat heavy cream in a saucepan until simmering, pour over chopped dark chocolate, and stir until smooth.
- To assemble, layer sponge cake with coffee buttercream and repeat until all layers are stacked. Pour ganache on top and let set before slicing.
Notes
- Allow the cake to cool completely before frosting.
- Store in the refrigerator for up to 3 days.
