Description

Classic Opera Cake is a luxurious French dessert that masterfully layers almond sponge cake, rich coffee buttercream, and velvety dark chocolate ganache.


Ingredients

  • 1 cup almond flour
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup strong brewed coffee
  • 8 oz dark chocolate (70% cocoa)
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two rectangular baking pans and line them with parchment paper.
  2. In a mixing bowl, combine almond flour and cocoa powder. In another bowl, whisk eggs and sugar until fluffy. Gently fold in the dry ingredients until fully combined.
  3. Divide the batter evenly between the prepared pans and bake for 15-20 minutes or until a toothpick comes out clean. Allow to cool completely before removing from pans.
  4. Prepare the coffee buttercream by creaming softened butter with powdered sugar, then gradually adding brewed coffee until light and fluffy.
  5. For the ganache, heat heavy cream in a saucepan until simmering, pour over chopped dark chocolate, and stir until smooth.
  6. To assemble, layer sponge cake with coffee buttercream and repeat until all layers are stacked. Pour ganache on top and let set before slicing.
