- 1 pound ground beef
- 1 cup long-grain white rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups beef broth
- 2 tablespoons taco seasoning
- 1 ½ cups shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, seasoning with salt and pepper. Drain excess grease if needed.
- Add chopped onion, garlic, and diced bell pepper. Cook for 4-5 minutes until softened and fragrant.
- Stir in rice and taco seasoning until everything is evenly coated.
- Pour in diced tomatoes with green chilies and beef broth. Stir, bring to a simmer, then cover and reduce heat to low. Cook for 18-20 minutes or until rice is tender.
- Remove lid, gently stir, and sprinkle shredded cheddar cheese on top. Cover again and let cheese melt for 3-5 minutes.
- Garnish with sour cream, cilantro, jalapeños, or avocado if desired. Serve hot.
