Description

One Pot Lemon Herb Chicken and Rice is a quick and delicious recipe that combines tender chicken and flavorful rice, all cooked in one pot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning
  • 1 cup uncooked white rice
  • 2 ¼ cups chicken broth (low sodium)
  • Juice of 1 lemon
  • 1 teaspoon Italian seasoning

Instructions

  1. Melt butter over medium-high heat in a large skillet or pan with a lid.
  2. Season chicken with salt, pepper, and Italian seasoning. Brown chicken for 1-2 minutes on each side. Transfer to a plate (the chicken should not be cooked through).
  3. In the same pan, add rice, chicken broth, lemon juice, and remaining Italian seasoning. Stir to combine.
  4. Return chicken to the pan, placing it on top of the rice mixture.
  5. Cover the pan and simmer over medium-low heat for 20-25 minutes until the rice is tender and the liquid is absorbed.
  6. Serve hot, garnished with fresh parsley or cilantro and extra lemon wedges if desired.
