One Pot Lemon Herb Chicken and Rice is a quick and delicious recipe that combines tender chicken and flavorful rice, all cooked in one pot.

- 4 boneless, skinless chicken breasts
- 2 tablespoons butter
- Salt and pepper to taste
- 2 teaspoons Italian seasoning
- 1 cup uncooked white rice
- 2 ¼ cups chicken broth (low sodium)
- Juice of 1 lemon
- 1 teaspoon Italian seasoning
Instructions
- Melt butter over medium-high heat in a large skillet or pan with a lid.
- Season chicken with salt, pepper, and Italian seasoning. Brown chicken for 1-2 minutes on each side. Transfer to a plate (the chicken should not be cooked through).
- In the same pan, add rice, chicken broth, lemon juice, and remaining Italian seasoning. Stir to combine.
- Return chicken to the pan, placing it on top of the rice mixture.
- Cover the pan and simmer over medium-low heat for 20-25 minutes until the rice is tender and the liquid is absorbed.
- Serve hot, garnished with fresh parsley or cilantro and extra lemon wedges if desired.
