One Pot Creamy Mushroom and Spinach Pasta is a comforting dish that combines earthy mushrooms, garlic, cream, and spinach in a luscious sauce. It all cooks in one pot for minimal effort and maximum flavor.

- 2 tbsp olive oil or butter
- 1 small onion (finely diced)
- 3 garlic cloves (minced)
- 400 g mixed mushrooms, sliced
- 300 g pasta (penne, linguine, or fettuccine)
- 3 cups vegetable broth
- 1 cup heavy cream or half-and-half
- ½ cup grated Parmesan cheese
- 2 cups fresh baby spinach
- ½ tsp salt (to taste)
- ¼ tsp black pepper
- Pinch of nutmeg (optional)
- Fresh parsley and extra Parmesan (to serve)
Instructions
- Heat olive oil or butter in a large pan over medium heat. Add onion and cook until soft, 3–4 minutes. Add garlic and sauté for 30 seconds until fragrant.
- Stir in sliced mushrooms and cook for 5–6 minutes until golden and tender.
- Add pasta, vegetable broth, and cream directly into the pan. Stir to combine.
- Bring to a gentle boil, then reduce heat to medium-low. Cook uncovered for 10–12 minutes, stirring occasionally, until pasta is al dente and liquid has mostly absorbed into a creamy sauce.
- Stir in spinach until wilted, then add Parmesan and nutmeg (if using). Season with salt and pepper to taste.
- Garnish with chopped parsley and extra Parmesan. Serve warm.
Notes
- Use any type of mixed mushrooms for added flavor.
- Adjust the amount of cream for desired richness.
- Leftovers can be stored in the fridge for a few days.
