Description

One-Pot Creamy Chicken Orzo is a quick and easy meal that combines tender chicken, creamy sauce, and orzo pasta.


Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach (fresh, chopped)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley (optional garnish)
  • Extra Parmesan cheese (optional garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the bite-sized chicken pieces to the pot. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the orzo pasta and cook for about 1-2 minutes.
  5. Add the chicken broth and Italian seasoning. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid, stirring occasionally.
  6. Stir in the heavy cream and chopped spinach. Return the cooked chicken to the pot and mix well.
  7. Stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.
  8. Serve the creamy chicken orzo hot, garnished with chopped fresh parsley and extra Parmesan cheese if desired.
