Ingredients

  • 1 lb (450g) chicken breast tenders
  • 1 lb (450g) asparagus, woody ends trimmed
  • 3 tbsp (45g) butter, melted
  • 1 tbsp (15ml) olive oil
  • 1 lemon (half juiced, half sliced)
  • 1 tsp (5g) Italian seasoning
  • 1 tsp (5g) garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken tenders with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 3-4 minutes per side until golden and cooked through; remove and set aside.
  4. Add asparagus to the same skillet and sauté for 4-5 minutes until tender-crisp.
  5. Return chicken to the pan.
  6. Whisk melted butter, lemon juice, and Italian seasoning; pour over chicken and asparagus.
  7. Garnish with lemon slices and parsley.
