Easy One Pan Hot Honey Garlic Chicken & Roasted Veggies Recipe


Ingredients

  • 1.5 lbs Boneless, Skinless Chicken Thighs
  • 1/4 cup Honey
  • 3 tbsp Hot Sauce (sriracha or cayenne pepper-based)
  • 4 cloves Fresh Garlic (minced)
  • 1/4 cup Soy Sauce (or tamari for gluten-free)
  • 2 tbsp Rice Vinegar (or apple cider vinegar)
  • 2 tbsp Olive Oil
  • 2 cups Broccoli florets
  • 2 Bell peppers (any color)
  • 1 Red onion (wedges)
  • 2 cups Cubed potatoes (regular or sweet)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Smoked Paprika (optional)
  • 1 tsp Dried Oregano or Thyme (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
  2. Wash and chop all chosen vegetables into roughly 1 to 1.5-inch pieces. Toss the chopped vegetables in a large bowl with about 2 tablespoons of olive oil, salt, black pepper, and any other seasonings. Spread the seasoned vegetables out in a single layer on one side of the prepared baking sheet.
  3. In a medium bowl, whisk together the honey, minced fresh garlic, hot sauce, soy sauce, and rice vinegar until well combined.
  4. Pat the chicken thighs dry with paper towels and season both sides lightly with salt and black pepper.
  5. Pour about two-thirds of the hot honey garlic sauce over the chicken and toss to coat evenly. Arrange the chicken pieces in a single layer on the other half of the baking sheet.
  6. Place the baking sheet in the preheated oven and roast for 15 minutes.
  7. After 15 minutes, remove the pan from the oven, flip the chicken pieces, stir the vegetables, and drizzle the remaining one-third of the hot honey garlic sauce over everything.
  8. Return the pan to the oven and continue to roast for another 15-20 minutes, or until the chicken is cooked through and the vegetables are tender and browned.
  9. Once done, remove from the oven and serve hot, garnished with fresh chopped parsley or cilantro.
