Ingredients
- Chicken thighs (bone-in, skin-on preferred)
- Fresh peaches (ripe and juicy)
- Hot honey
- Fresh basil (sweet basil recommended)
- Olive oil (extra virgin)
- Garlic (fresh minced)
- Salt
- Pepper
Instructions
- Preheat your oven to 400°F (200°C) so it’s hot and ready for roasting.
- Pat the chicken thighs dry with paper towels. Season generously with salt and pepper on both sides.
- In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once shimmering, add the chicken thighs, skin side down. Sear them for about 5-7 minutes until golden brown.
- Once golden, flip the chicken thighs and add the minced garlic to the pan. Sauté for about 30 seconds until fragrant.
- Arrange the sliced peaches around the chicken in the pan. Pour the hot honey over the chicken and peaches, ensuring everything is well coated.
- Transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the pan from the oven, and sprinkle fresh basil over the chicken and peaches. Let it rest for a few minutes before serving.
- Plate your chicken and peaches, drizzling any remaining glaze from the pan over the top. Enjoy this delightful dish warm!
