- 8 oz Cremini or button mushrooms (sliced)
- 1 medium Shallots or onion (chopped)
- 2 cloves Garlic (minced)
- 4 cups Vegetable or chicken broth (warm)
- 1/2 cup Heavy cream or half-and-half
- 2 tbsp Butter
- 1/2 cup White wine (optional)
- 1 tbsp Fresh thyme or parsley (chopped)
- to taste Salt and black pepper
- 1/4 cup Parmesan cheese
- 1 cup Baby spinach or peas
- to taste Crushed red pepper flakes
Instructions
- Heat 2 tbsp butter in a large skillet over medium heat; cook shallots and garlic until fragrant and translucent, about 2 minutes.
- Add sliced cremini mushrooms, season with salt and pepper, then cook 5–7 minutes until they release moisture and turn golden brown.
- Stir in the Arborio rice, cooking for 1–2 minutes until edges look translucent.
- Pour in white wine (if using) and simmer until mostly absorbed.
- Add warm broth gradually, stirring gently, cover, and simmer 15–18 minutes until rice is tender and creamy.
- Stir in heavy cream and fresh thyme, cook 2 more minutes until silky smooth, then adjust seasoning.
