  • 1 medium Shallots or onion (chopped)
  • 2 cloves Garlic (minced)
  • 4 cups Vegetable or chicken broth (warm)
  • 1/2 cup Heavy cream or half-and-half
  • 2 tbsp Butter
  • 1/2 cup White wine (optional)
  • 1 tbsp Fresh thyme or parsley (chopped)
  • to taste Salt and black pepper
  • 1/4 cup Parmesan cheese
  • 1 cup Baby spinach or peas
  • to taste Crushed red pepper flakes

Instructions

  1. Heat 2 tbsp butter in a large skillet over medium heat; cook shallots and garlic until fragrant and translucent, about 2 minutes.
  2. Add sliced cremini mushrooms, season with salt and pepper, then cook 5–7 minutes until they release moisture and turn golden brown.
  3. Stir in the Arborio rice, cooking for 1–2 minutes until edges look translucent.
  4. Pour in white wine (if using) and simmer until mostly absorbed.
  5. Add warm broth gradually, stirring gently, cover, and simmer 15–18 minutes until rice is tender and creamy.
  6. Stir in heavy cream and fresh thyme, cook 2 more minutes until silky smooth, then adjust seasoning.
