Ingredients

  • 4 Bone-in, skin-on Chicken Thighs
  • 1 can (13.5 oz) Coconut Milk
  • 1 Lime
  • 4 Garlic Cloves, minced
  • 1 tablespoon Fresh Ginger, grated
  • 1/2 cup Chicken Stock
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Black Pepper to taste
  • 1/2 teaspoon Chili Flakes (optional)

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear until golden brown and crispy, about 4-5 minutes per side. Remove the chicken from the pan and set aside.
  3. Add minced garlic and grated ginger to the pan, cooking for about 1 minute until fragrant.
  4. Pour in coconut milk and chicken stock, stirring to combine. Add lime zest and lime juice, then bring to a simmer.
  5. Return chicken thighs to the pan, skin side up. Cover and simmer for 15-20 minutes until the chicken is cooked through and tender.
  6. Remove the lid and let the sauce reduce for 3-5 minutes. Taste and adjust seasoning with salt, pepper, or extra lime juice if needed.
  7. Garnish with fresh cilantro or chopped green onions and serve with your preferred side dish.
