Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves fresh garlic, minced
  • 2 bell peppers (1 red, 1 green), sliced
  • 1 (14 oz) can diced tomatoes (with juice)
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp balsamic vinegar

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper. Sear in the skillet until golden brown, about 5 minutes per side.
  3. Add diced onions and minced garlic. Sauté until onions are translucent, about 3 minutes.
  4. Stir in sliced bell peppers and canned diced tomatoes with juice.
  5. Sprinkle Italian seasoning, then add balsamic vinegar and chicken broth.
  6. Reduce heat to low, cover, and simmer for 25-30 minutes until chicken is cooked through.
