- 1.5 lbs boneless, skinless chicken thighs
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 medium onion, diced
- 4 cloves fresh garlic, minced
- 2 bell peppers (1 red, 1 green), sliced
- 1 (14 oz) can diced tomatoes (with juice)
- 2 tsp Italian seasoning
- 1/2 cup chicken broth
- 2 tbsp balsamic vinegar
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper. Sear in the skillet until golden brown, about 5 minutes per side.
- Add diced onions and minced garlic. Sauté until onions are translucent, about 3 minutes.
- Stir in sliced bell peppers and canned diced tomatoes with juice.
- Sprinkle Italian seasoning, then add balsamic vinegar and chicken broth.
- Reduce heat to low, cover, and simmer for 25-30 minutes until chicken is cooked through.
